Getting these 100 gal cognac barrels ready to fill will the Gigantic Collaboration I did with my buddy Ben Love for his new brewery Gigantic Brewing! It’s a Belgian Imperial stout, age in the cognac barrels with brettanomyces, soured, then the addition next fall with salmon berries. It’s gonna me a monster! These barrels are freshly emptied from France and still have about 2 gallons of cognac left in them. They were built in 1962.
